Rosemary lemonade recipe

You can now buy bottles of gomme – simple sugar syrup – in supermarkets and off-licences. I find it useful to have on hand.

Prep time: 5 minutes

  • 100ml lemon juice (juice of 2-3 lemons), plus extra lemons to serve
  • 100ml sugar syrup (gomme)
  • 4 sprigs rosemary,
plus extra to serve
  • 600ml sparkling water
or soda water
  • Drops of Angostura bitters, added to taste
  • Ice, to serve

  1. Put the lemon juice and sugar syrup into a plastic jug. Put the sprigs of rosemary into the bottom and – with one end of your rolling pin – bash the rosemary (it will help to flavour the liquids). Top with the sparkling water or soda water. If you are happy about this being slightly alcoholic, then add the Angostura to taste. Otherwise, you can add
it to individual glasses.
  2. Put ice and one sliced lemon into a serving jug and pour in the lemonade. Drop a sprig of rosemary and a slice of lemon in each glass before serving.
