Gobi aloo is a popular dish in the northern part of India. (Gobi means “cauliflower” and aloo means “potato.”) Like dal, it has become a popular dish worldwide. It gets its flavors from turmeric, ginger, garlic and lime, but you can adjust these ingredients based on your preferences. For variations on this recipe, add or swap in different vegetables such as carrots, peas or chopped green beans.

Can you make gobi aloo in advance?

Yes, gobi aloo keeps well in the refrigerator for about 3 or 4 days. However, we recommend making it fresh because it only takes about 10 minutes using an Instant Pot. Serve gobi aloo alongside some other Indian recipes.

How do you store gobi aloo?

You can store gobi aloo in an airtight container in the refrigerator for up to 4 days and reheat it in the microwave for about 3 minutes. You can also freeze gobi aloo. However, if you’re planning to freeze it, keep the vegetables a bit undercooked. When you’re ready to serve it, thaw it and then pan-fry on the stove until the cauliflower and potatoes are cooked through.
